Yams with Ginger & Cinnamon

How timely – just came across this recipe!

Prep and Cook Time: 25 minutes

Ingredients:

6 cups yams, peeled and cut into 1-inch pieces
½ medium onion, cut in half and sliced thin
4 medium cloves garlic, chopped
1-½ TBS finely minced fresh ginger
½ tsp cinnamon
½ TBS honey
1 TBS + 1 cup chicken or vegetable broth
salt and white pepper to taste

Directions:

  1. Slice onions and chop garlic and let sit for 5 minutes to enhance their health-promoting properties.
  2. Cut yams into 1″ cubes.
  3. Heat 1 TBS broth in a 12-inch or larger stainless steel skillet.
  4. Sauté onion over medium heat for 3 minutes, stirring frequently.
  5. Add garlic and ginger and continue to sauté for another minute, stirring constantly.
  6. Add yams, cinnamon, honey, and 1 cup broth.
  7. Mix and simmer over low heat covered for about 15 minutes, or until yams are tender.
  8. Season with salt and pepper.
  9. Enjoy!

Ginger Star Cookies

 

All-Natural Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp ground ginger
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 & 1/2 sticks unsalted butter (12 tbs)
  • 3/4 cup dark brown sugar
  • 1/2 tsp vanilla
  • 1/4 cup chopped crystallized ginger
  1. In a medium bowl combine flour, ginger, baking powder, and salt. Set aside.
  2. In a medium bowl beat butter and brown sugar with electric mixer until light (about 2 minutes). Beat in vanilla.
  3. Stir in flour mixture (Step 1)
  4. Add crystallized ginger
  5. Gather into a ball. Wrap in plastic wrap. Refrigerate several hours or overnight.
  6. Heat oven to 350 degrees
  7. Line baking sheet with parchment
  8. On lightly floured surface roll out dough to 1/2″ thickness
  9. Cut dough with 2&1/2″ star-shaped (or any shape) cookie cutter
  10. Place cookies on prepared sheet, spaced 1&1/2″ apart
  11. Bake 10-12 minutes (or until cookies are lightly browned around edges)
  12. Remove cookies from baking sheet and allow to cool
  13. Enjoy!

Makes 36 cookies
